the brown butter ended up in little clumps, i guess that should be of no surprise to anyone with a basic understanding of food chemistry, or life. maybe i should have mixed it into the orgeat, somehow.

this drink is a blatant ripoff of the kaffir fling, by david wolowidnyk of west restaurant in vancouver, bc. his version includes cinnamon sprinkled through a blowtorch which looks and smells pretty awesome.

nothing ruins a good cocktail like a mouthful of salt. the practice must have originated in a time or place where the prevailing culinary issue was how best to obscure the taste of rotting meat with eucalyptus leaves and fish guts.

from a recipe by scott beattie (”beau regards”), he makes a special syrup. as usual, i was too lazy to do such a thing. i also only used five berries (frozen from back in the season) which yielded a distinct, but shallow, blueberry flavor, and a beautiful magenta color.
