(inspired by the alinea cookbook)
2 oz gin
1 oz lemon
1 oz orange orgeat
3 medium-sized basil leaves
2 drops peychaud bitters
gently muddle leaves. combine remaining ingredients with lots of ice, shake, strain.

fondant cutters (i think david w uses these) or hole punchers
from scott b’s waverly place echo: candied lemon zest, a marinated mandarin segment, and a circle (hole punch) of kaffir lime, all on a skewer a la alinea’s hot potato/cold potato.

the sesame orgeat i made (1/2 C almond milk, 1/4 cup seeds) was a little too overpowering of sesame, i also wish i’d used plain water [...]
