experiments: more with peach and punt e mes

muddled a quarter of a medium-large yellow peach, tart but flavorful. mixed in 3 oz of punt e mes, double strained into a jar as the base mixture.

then mixed a bunch of mini-cocktails using 1/2 oz of the base mixture and 1/4 oz of a spirit. the spirits i used and my tasting notes are as follows

rye (rittenhouse) yes! it works and it rocks
gin (bombay sapphire) like a peachy martinez. delicious
aged rum (brugal) even this is awesome? seriously?
citrus-vanilla infused bourbon (evan williams) oh my goodness
tequila (azul reposado) wowowowowow
dark rum (goslings) holy fuck
brandy (paul masson vsop) jesus fucking almighty
bourbon (evan williams) classic as fuck

each drink perfectly highlighted everything good about the added spirit.

i’m thinking of calling the base mixture “penta-tonic” because it goes with anything! hahahaha omg im a nerd

other notes: to build the drink, i poured the base mixture into a small glass with two stacked ice cubes, poured the spirit on top of that, and stirred. it could be that adding the spirit last, and on top of ice cubes, creates a prominent aroma and an illusion of flavor, without making the drink too stiff.

    Peach Punt e Mes is excellent.

    My experiment: Equal parts peach-Punt-e-Mes and bourbon (Buffalo Trace), scant 1/4 Benedictine, 1/4 lemon juice, dash of Angostura, shaken? Downside: pours murky.

    sounds great…i don’t have any experience with benedictine. i should get some.

    the peach-punt combo has made me much more conscientious about the peaches i buy, where they come from and what they smell like, and also less price sensitive.

    do you have any cocktail bar recs in the chicago area other than the violet hour?

    Benedictine is awesome. One of my favorite after-dinner drinks is a half cup of strong black coffee and shot of Benedictine, topped with wet cream. Holy crap.

    There aren’t really any that can stand up to the glory of the VH. The Whistler is good, but it’s definitely tier below – it’s still pretty new though. Bar DeVille apparently has a good cocktail program, but you wouldn’t know it because it winds up packed wall-to-wall with PBR-swilling hipsters every weekend night and god help you if you want a decent drink then.

    I am really into this peach punt e mes. I might try to find a way to get it to infuse in a more stable fashion.

    I would like to see more cocktail bloggers say “jesus fucking almighty.” That’s the sort of thing I saw when I taste something good, at least.

    Shit, that sounds good.

    Last time I was in SF, my friends and I posted up at Alembic six nights in a row. We went other cocktail joints too, but we always wound up at Alembic for yet another Vice Grip.

    oh yeah. the vice grip is insane. i wasn’t too thrilled with the two other cocktails i had from alembhic but the vice grip…sui generis.
