trip report: nopa; experiment: peach and punt e mes

had three cocktails at nopa:

escondido romano – chipotle vodka, cynar, dimmi, cava
valkyrie – aquavit, aperol, vermouth (dolin blanc), sunshine (saffron) bitters
sherry shrub – manzanilla sherry, huckleberry shrub

i admired these more than i liked them. what i mean is: none were boring. all were perfectly balanced. the flavors were new, interesting. but nothing charmed my palette.

is there a douchier way to say that?

i would go back. but not before trying the other half dozen places on my list.

the food was pretty outstanding. jp didn’t dig the underdoneness of both the pork chop and burger, though.

muddled yellow peach and punt e mes, orange twist. it works, bitches. even with an unripe peach. (or maybe the unripeness gives it some acid…) i’ll try to put together some other ingredients to make it more cocktail-y, but it’s pretty much perfect as is.

valencia oranges + serrated peeler make great ribbons. big, no pith.
